Why not make a Simnel Cake this Easter?

Simnel Cake is a fruitcake that has been enjoyed since medieval times as both a rich, sweet treat and a symbolic ritual associated with Lent and Easter andmade with spices, dried fruits, zest and candid peel. 

It traditionally includes layers of almond paste or marzipan, one in the middle and one on top and a set of marzipan balls.

It was originally made for the fourth Sunday in Lent when the fast period was relaxed.
